(Check section on Abilities in the Wiki for further detail on this ). Your devil fruit will do more damage based on your fruits mastery and your devil fruit stats(3 masteries equals to 1 stat point). If you want to remove your fruit, go to Prison. Behind the jail, up on a wall, there is an NPC called Blox Fruit Remover.
